Cherry Crisp

My cherry tree is called ‘Bali’ and it produces a tart/sweet cherry that is delicious in baked things. Crisp is simply a fruit compote with a crunchy topping.

Heat oven to 350 degrees F.

Fruit Layer

6 cups cleaned fruit, all cherries or cherries and other berries mixed

Juice of 1/2 lemon

1 – 1 1/2 cups sugar (depending on how tart you like things)

1/2 cup flour

Put  fruit  in a baking pan and squeeze the juice of 1/2 a lemon over it. Mix together in another bowl sugar and flour. Pour the sugar/flour over the fruit and mix thoroughly. It will thicken as it bakes.

Topping Layer

1 cup oats

1/2 cup flour

1/2 cup sugar

2 tsp cinnamon

6 TBSP butter, melted

In the same bowl that you mixed the flour and sugar, mix together oats,  flour,  sugar, and cinnamon. Add butter and mix well to distribute the butter. Then, sprinkle this over the fruit mixture, and bake it all for about 1 hour. It’s done when the topping is brown and the fruit is bubbling slowly beneath it, indicating that the fruit is thickening.

Let it cool and serve with whipped cream or ice cream for a dessert.
